Kefalonian Shortbread



  • 1 kg flour

  • 250gr butter

  • 250gr margarine

  • 1 egg

  • 1 vanilla extract

  • 250gr sugar

  • 1⁄2 cup fresh orange juice

  • 1⁄2 teaspoon soda

  • 1⁄2 teaspoon baking powder

  • about 1 jar of marmalade

Preparation Method

  1. Beat very well the butter.

  2. Add the sugar while beating

  3. Add the egg and beat the mixture very well.

  4. In the orange juice add the soda and pour that in the mixture and stir.

  5. Add the vanilla

  6. Combine flour and baking powder and stir until it is well mixed.

  7. Gradually pour the flour in the mixture and knead very very well. Don't use the whole amount of flour, usually 3­4 tbsp is left. You want a nice and soft pastry

  8. Use grease - proof paper and make simple shapes if you want the cookies without marmalade or “boat” shape if you want them with marmalade on top. You can also coat them with melted chocolate.        

  9. Suffuse with a little milk or egg with a little water and bake to 180 Celsius degrees for about 20 minutes.
